Or at least remembering it has to be done. I don’t know about you but my biggest challenge as a wife, mom, and student is management. Just keeping track of it all, schedules, assignments, appointments, it can be quite overwhelming. Some moms use digital calendars, to do lists and reminders to keep them on track. That is a fantastic strategy if it works for you. I find that it is far to easy for me to ignore digital reminders especially if I am busy. I also tend to remember things better if I write them down. So I use a paper calendar. If you are on Pintrest you have probably seen posts about bullet journals. They are beautiful but far to elaborate for my needs. I do use bullet journaling techniques and ideas but in a way that works better for me. If you have a method that you like to use to remember everything, by all means use that! If some of my tips and techniques can help add them to what you already do.
The first thing that is important about keeping a calendar is you have to use it. Everyday. Digital or paper be sure it is easy for you to get to and use. Secondly keep only one, I know it is tempting to keep one for work or school, one for the kids activities etc. I find that things get missed that way. If everything is in one place you will never forget something because you forgot to look at the right calendar. Now if you use a digital calendar on your work desktop that is fine, but merge it with you home calendar so that you can have everything in one interface. Another part of using it daily is keeping it handy. My calendar is fairly large but I carry it everywhere. (Big purses are the best!) Keep it with you, and put things in it right away. If you wait until later you will forget something.
I personally use Day Timer’s Mom Planner. It is hard to get refills for and everyou year I threaten to use something else but it really is the best for my needs. It has plenty of room to write and spaces for menu planning and to do lists. It is 5×7 inches and that is a convenient size for me. Like I said earlier, this isn’t an ad just use whatever works for you. Few other things to try that may help you manage your family a little better. I color code family stuff is always pink. My classes are color coded too so I can see assignments at a glance. I do use the bullet journaling technique for to do lists. Things to do have a dot in front of them. When they are completed I make the dot an X. If I want to move them to another day I put an >. Then when I am planning my day tomorrow I move them. That’s another great technique, look at it EVERY night and EVERY morning.
I hope these tips help you get your life and your family more organized. I still forget things sometimes, but keeping things in one place helps a lot.
I have decided to start blogging again. I actually never decided to stop blogging, I just got overwhelmed. After I had Avery in 2013 I went through some post-partum anxiety and it got too hard to keep up with the blog. Then it seemed like too much time had passed. I’ve decided to start again now because I feel like I am at a place of new beginnings in my life. I got laid off last from my job November. It was actually a wonderful thing. I got the chance to stay home with Avery for a while. Now I am a college student, it is exciting but, brings a whole new set of challenges to our lives.
The format of this blog is going to be a little different I am still going to post, recipes, projects and tips so if you loved that stuff it will still be here. I will also be posting about going back to school. Time management, or as it is known in my house, how am I going to do all this? Raising a preschooler, my anxiety, and just how I feel about everything in the world. I hope that you can get to know me a little better. Stick around it should be fun!
I made pickled radishes this week. We had a lot from our CSA and really how many radishes can you eat? Pickled radishes are so easy just a basic vinegar and and salt brine. Hot water bath processed for 10 minutes. They have a great sour spicy bite to them. The best thing about pickled radishes they are really pretty. They are a great addition to a gift basket of home made goodies.
This is a favorite for parties and picnics. We served it at my baby shower and everyone loved it. Its also a great use for all the basil in your garden.
What you need:
1 cup Basil packed
2 cups water
2 cups sugar
What to do:
First we are going to make basil tea to use as a base of our simple syrup. We tried to just make the syrup infused with the basil but it did not work well. So boil the water in a pan. When it boils take it off the heat and throw in the basil. Let it sit like that till it cools. Strain out the leaves, I squeeze them a little to get all the basil goodness. Discard the leaves.
Now to make the simple syrup add the sugar to the tea and simmer till it reduces by half. It will start to look like syrup. Let the syrup cool before using it. You can store it in a jar in your pantry too.
Now to make lemonade it goes like pour 1 part lemon juice 1 part syrup and 2 parts water over ice. Feel free to change the amounts to suit your taste. Garnish with lemon slices.
We have doubled and even tripled this recipes for parties. Also it mixes great with vodka, if you’re into that sort of thing.
This is one of our favorite summer drinks. Hope you like it as much as we do.
This week I was given some tomatillos and some peppers. Seemed like the perfect time to make salsa verde.
After removing the husks and and washing the tomatillos. I cut them in half. I split and seeded the peppers. Cut up some onions and garlic. Put them all under my broiler for about 15 minutes. Till they looked like this.
After they cooled I put them all in the food processor with the juice of one lime salt and cilantro to taste and ran it all around. The finished product looks like this.
It’s fresh and delicious awesome on tacos or just chips and so easy to make.
There seems to be an over abundance of cucumbers in my area. Friends are gifting garden cukes and there are some in my CSA. So I wanted to pass along a quick cucumber recipe. I don’t much feel like making pickle right now, but this is easy and delicious.
What you need:
3 or so large Cucumbers
16 oz plain Greek yogurt
4 oz Feta Cheese crumbled
Juice of one Lemon
2 or 3 big Tablespoons of Dill chopped or dried
What to do:
Slice the cucumbers thin I don’t peel them. You can if you want to I think they hold up better not peeled.
Mix all the other ingredients in a very large bowl and toss the cucumbers to coat.
If you can make it the day before and let it sit in the refrigerator overnight.
That’s it so simple and so very good. I could eat this all the time.

Here’s what you need:
Large bunch of Greens Kale and Escarole work well
3 or 4 slices of bacon
1 can coconut milk
1 cup of broth I use chicken but veggie would work too
Here’s what you do:
Rough chop the onion and bacon
Saute the bacon and onion in a large sauce pan till onions are translucent
Add coconut milk and broth bring to a simmer
Add greens and salt and cayenne to taste
Cook until the greens have all wilted.
It will be very much like soup this dish is often used as a gravy over roasted meat.
I promised an update and more exciting things this Summer. The hooligan and I had a baby bunny on 6/25 she is beautiful.
I don’t want this to become a “mommy blog” but I am sure Little Miss will show up in posts on a regular basis. Since I am home on leave for most of the summer I hope to be adding recipes and other projects too.
The recipe was adapted (stolen) from a sweet potato soup Adrian Stock used to make. It’s extended-family-holiday-dinner-sized, so reasonable people will want to halve the amounts.
2-3 Butternut squash
2 big onions
1 cup cashew pieces, roughly chopped
4 cups veg or chicken stock
1 1/2 cups heavy cream (for less fat, use evaporated skim milk)
big fist of fresh dill, chopped
2 tbsp olive oil
black pepper1. Cut squash lengthwise and remove seeds. season w/salt & pepper, then bake at 400 deg until soft. Let cool, scoop out flesh.
2. Dice onions and saute in olive oil until translucent, add cashews, stirring until nuts are lightly browned. Make joke about nuts.
3. Add stock, squash, cream, & dill. Blend with immersion blender. Simmer for 45-60 minutes. You may want more salt if the cashews were not too salty.To switch it up a bit, replace cream & dill with coconut milk & curry powder. You can use almond, soy or coconut milk to make vegans happy. I’ve used almonds, pine nuts, and macadamias successfully, and a quick version using canned pumpkin wasn’t bad.
It is feeling so much like Autumn here in the rabbit hole. The air is crisp and I am craving apples. We have been very busy lately with allergy testing, car repairs, lighthouse trips, and a new tattoo.
I found out I am allergic to every inhaled allergen they test for. And eggs. I have been editing recipes and trying egg substitutes but I still miss them. So, expect more entries about the ongoing battle to be eggless.
We have been canning a lot too. Salsa, lots of relish, green beans and eggplant. I will post pictures soon.
Autumn also has me in the mood to knit, everyday. I have been working on a blanket all summer and am starting to make real progress finally.
